Good 2D Sprite Art/bitmap Graphics Tutorials?

Well that is ancient. If I were to do anything like that today I would spiff it up a bit. I mean 28 colors is pretty lame by today's standards. Originally it was to be a remake for ... the Amiga! (Yes it is that old) Hence the less than 32 colors and 320 x 200 resolution. Kids these days are spoiled by their fancy photoshop and 32-bit color :p

A DK remake with a bunch more levels would be cool, but I am sure the big N would have a few things to say about it and it wouldn't be good.

I use Promotion for pixel art. I sometimes use that in combination with Photoshop too. For the graphics in the default Minimenu skin I used Promotion to lay everything out in separate layers then used PS to add shading and effects. It is a good combination. Promotion is great for pixel editing while PS is good to add shading etc.
