I'm making this thread as a resource with links to Dingoo resources as I think one is much needed! If a mod could sticky this thread I'd be grateful.
I will update with more information about the content of the links as and when I get time!
If you have your own links to Dingoo resources and Accessories please add them and I'll merge them into the main thread as soon as I get the chance!

About installing Dingux and finding local.zip - Thanks gp2xs!
Dingux is a Linux build that can be installed on your Dingoo's memory card. It features more emulators (including a much better SNES emulator) and lots of homebrew. You can dual-boot between Dingoos standard firmware and Dingux by holding the select button at startup.
Once you've installed Dingux you'll want some apps for it! A couple of good well-maintained selections, including a nice menu system are linked to in the information below.
More local packs here: http://boards.dingoonity.org/dingux-releases/gmenu2x-nuke-0-1-(local-pack)/
A complete guide to installing Dingux from a Windows system is available here (thanks Kalisiin)
About POF's custom firmware - Thanks GunPei2X!
The custom firmware is an alternative Dingoo firmware that includes a couple more emulators, fixes Dingoo's broken English and allows custom themes.
Accessories
Dingoo cases
A friend of mine sells a couple variety of Dingoo cases on ebay. They can be found here.
More cases and accessories here (thanks Kalisiin)

1. Get the dual boot installer and the latest "dingux-system" from:
http://code.google.c.../downloads/list
2. Install the dual boot using included instructions.
3. Copy the rootfs and correct zImage (from the dingux-system archive) to your MiniSD card.
Now you need a menu and some applications. These are stored in the "local" folder on your miniSD.
I've found two good sources for the local folder
This thread has a good local folder and Warpedflash includes shareware WADs and sample games for most of the ports and emulators.
Get the "Local dump" from the first post and extract the local folder to your MiniSD and your good to go.
However, this version lags behind in the latest apps and features:

For a more updated Local folder this one is based off of Warpedflash's folder structure but is more regularly updated.
This is the one I use [with the Reminisce and Duke3D from Warpedflash's version] :
